RECIPE for Green and Yellow Zucchini Pasta

1 1/2 lb. Fresh Plum Tomatoes halved

1 Cup Packed Fresh Basil Leaves, chopped plus Sprigs for garnish

1/3 Cup Sun-Dried Tomatoes, Chopped in half

1/2 Cup Extra Virgin Olive Oil

1 Large Shallot, cut in half

Sea salt or Kosher Salt to taste freshly grounded pepper

1 Large Package of Hutchinson Farms Squash Pasta

1 Small Orange Bell Pepper, halved and seeded

8 OZ. Of fresh shredded Mozzarella


Optional Ingredients:

1/2 Cup Walnuts, Chopped grated Parmesan Cheese



1. Put tomatoes, basil, sun dried tomatoes, 3 Tbs. oil, shallouts, dash of salt, ground pepper and orange pepper into the food processor and process until sauce resembles finely textured salsa.

2.  In the meantime, have a pot of salted water boiling. Put Hutchinson Farms Squash Pasta in a colander then submerge in boiling water for 4 mins. Take out of water.

3. Drain Well

4. Put in bowls top with mozzarella cheese, let melt then top with fresh marinara, parmesan cheese, nuts garnish with basil, salt and pepper to taste.
